Weight Watchers Thai Chicken Salad

Ingredients

  • 3 tablespoons lime juice
  • 2 teaspoons canola oil
  • 2 teaspoons Asian fish sauce
  • 1½ teaspoons reduced-sodium soy sauce
  • ½ teaspoon sugar
  • 2 cups shredded cooked chicken breast
  • 1 (5-ounce) package baby Asian salad mix
  • 1 cup loosely packed fresh mint leaves
  • 1 cup shredded carrots
  • 1 small red onion, thinly sliced

Instructions

  1. Whisk together the lime juice, oil, fish sauce, soy sauce, and sugar in a large bowl. Add the chicken, salad mix, mint, carrots, and onion to the dressing; toss well to coat. Serve at once.
