Weight Watchers Citrus Chicken and Napa Slaw

Ingredients

  • 3 tablespoons mirin (rice wine)
  • 2 tablespoons lime juice
  • 2 teaspoons canola oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 cups thinly sliced napa cabbage
  • 2 cups shredded cooked chicken breast
  • 1 cup shredded carrots
  • 3 scallions, thinly sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Whisk together the mirin, lime juice, oil, salt, and pepper in a large bowl. Add the cabbage, chicken, carrots, scallions, and cilantro; toss well to coat. Serve at once, or cover and refrigerate until ready to serve, up to 2 hours.
