Sweet Potato and Broccoli Salad with Miso Cheese Dressing

INGREDIENTS

  • 1/2 broccoli
  • 2 sweet potatoes
  • 2 tbsp. miso paste
  • 4 tbsp. vinegar
  • 4 tbsp. olive oil
  • 40g cheese
  • 4 slices ham
  • 100cc water

INSTRUCTIONS

  1. Divide broccolis into small florets, sprinkle some water, and place in a heat-resistant container.  Cover with plastic wrap and cook in a microwave for 3 minutes.  Wash the sweet potatoes well and cut into 1cm thick slices with skins on.  Place them in a heat-resistant container and pour 100cc water.  Cover with plastic wrap and cook in a microwave for 6 minutes.
  2. Chop the cheese and ham into small pieces.
  3. Blend miso paste, vinegar, and olive oil.  Add the chopped cheese and ham.
  4. Place the cooked sweet potatoes and broccolis finely on a plate and pour the dressing (3) over them.
