- 7 egg whites
- ½ c. oatmeal
- ½ c. cottage cheese
- 1 drop vanilla extract
- Cooking spray
- In a blender, blend together egg whites, oatmeal, cottage cheese and vanilla extract until very smooth.
- Set a skillet or griddle sprayed with cooking spray over medium heat. Drop a ladleful of batter onto the skillet and cook for about 4 minutes or until edges are dry and bubbles form. Flip the pancake and cook for about 3 minutes or until browned. Repeat the process with the remaining batter.
