- 8 potatoes
- Salt, as needed
- Peel and slice the potatoes thinly. Cut each slice into thin strips. (Do not soak them in water.) Sprinkle with salt and toss.
- Heat a larger amount of oil than usual in a frying pan, spread the potato strips evenly over the pan, and sauté until the cooking side becomes crunchy. Press down the potatoes with a spatula occasionally so that the potatoes stick together to shape. Turn the potatoes upside down to cook the other side.
- Take out the galette onto a plate and top with ketchup or mayonnaise to your taste.
