Basic Croquette



  • 4 potatoes
  • 1/2 onion
  • 4cm carrot
  • 120 ground pork
  • 1 tsp. oil
  • Salt and pepper, as needed
  • 4 tbsp. all-purpose flour
  • 1 egg, beaten
  • 2 cups crunchy bread crumbs panko
  • Oil for deep-frying


  1. Peel the potatoes, cut into bite-sized pieces, place in a large pot, and cover with water.  Boil until soften and drain.  Place in a large bowl and mash coarsely leaving some chunks.
  2. Mince onion and carrot.  Heat the oil in a frying pan and stir-fry minced onions and carrots with ground pork.  Season with salt and pepper.  Add to the mashed potatoes (1), mix well, and season with salt and pepper to your taste.  Divide them into 8 portions and shape each portion into a small oval.  Coat with flour, then dip into the beaten egg, and then coat with bread crumbs panko.  Deep-fry them until golden at a medium temperature.
