Ingredients:

  • 2 cups uncooked regular oats
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1 1/2 cups mashed banana (about 3 medium)
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
    Directions:

    1. Preheat oven to 350°.
    2. Mix first 4 ingredients in a large bowl; stir well. Mix, oil, banana and vanilla; beat well. Now add banana mixture to dry ingredients, beat until mixed completely. Let stand 15 minutes. Drop dough by rounded tablespoonfuls onto ungreased baking sheets. Allow it to Bake at 350° for 15 minutes or until lightly golden. Shift cookies to wire racks; allow them to cool completely.
